Oh Happy Day!

It's been a busy month! Here's Shane at his preschool fieltrip with Mrs. Claus...

Stuffed Mushrooms & Las Vegas

So, at my Halloween Party...my stellar sis-in-law, Emilee brought these intensely good stuffed mushrooms. I am a huge fan of mushrooms (not the naughty kind) and I knew I had to make an entire batch just for me. I am taking the liberty of posting the instructions...with all due credit to Emilee, the great one, I will forever be in her debt.
Here's the low down...

You will need all of the above items... Garlic Salt, 2 packages of mushrooms (though it only shows one), green onions, Jimmy Dean sausage roll, and a pack of cream cheese.



Cook the sausage

In a bowl, whip the cream cheese, a tad bit of milk, and a few good shakes of garlic salt to taste.

Have your best looking child mix this up while you stir the sausage again.


Chop up your green onions into small pieces...however many you like. I don't like a lot...so, I just did a few.


Stir into your cream cheese mixture...


Next, add the cooked sausage. I ended up only using about 3/4 of the sausage.


Wash your mushrooms, please.

Break the stems off the mushrooms and put them on a sheet pan.


Put a small spoonful of mixture inside the hole and overflowing out...



Seriously, this is the hardest part. Carefully, ever so SLOWLY....carry the pan to the oven. Your mushrooms will want to tip over, roll around, and do the hanky panky. Bake at 350 for about 25 minutes.


When they come out they should look like barf. But, they will taste like heaven. I truly ate the whole pan myself in two days.



Perfect snack/meal for all fellow low-carbers and mushroom loving mongrels.


And now for our latest adventure...Thanksgiving in Vegas. Here we are at the Valley of Fire. It was an awesome place that Marc and Bonnie took us. Prime spot for pictures!
